Samuel's Cheese Selection
(additional charge of £6.95 if ordered as a fourth course)

Our cheese selection combines the rugged and crumbly character of our local cheeses from the Yorkshire Dales with a wide choice of other quality cheeses from the UK and the Continent

Cornish Yarg
A crumbly but moist cheese made from cows milk. The natural rind is covered with nettles that obtain a greyish hue due to the maturity of the cheese, the interior softens and the taste is reminiscent of meadow flowers.

Richard III
A rennet free, mould ripened, farmhouse, dry hard cheese from cow's milk lightly pressed to withhold its moisture. It is a cheese that crumbles with ease. Its strong lingering palate is a result of its extra maturation.

Yorkshire Blue
A gold award winning cheese, from the Shepherds Purse cheeses at Thirsk. This is a full fat soft blue cheese with a mellow and creamy texture.

Munster
An unashamedly strong and smelly cheese from Philippe Olivier, which comes to life at room temperature.

Swaledale Goats Cheese
A delightful chalky and crumbly goats cheese with a light clean flavour from upper Swaledale in North Yorkshire.

Tornegus
This Friesian raw cows milk cheese is washed with Kentish white wine and flavoured with peppermint and lemon Verbina. (Unpasteurised)

Epoisses
From the Bourguignon region of France, this is said to be one of Napoleon's favourite cheeses. This is a strong smelling cheese, having a mixture of salt, sweet, metallic and milky flavours.

Reblochon
Made in the Savoie region of the Alps, this soft runny cheese has a fresh taste of mountain air with a slight aroma from the washed rind.

Fleur Du Maquis
This sheep's milk cheese is coated in Herbs and Berries and left to ripen for 8 weeks, It is a light and creamy cheese with a hint of rosemary

Mull of Kintyre
A full rich cheese that has been matured for a minimum of nine months. It has been dipped in wax to retain flavour and freshness.

Gubbeen
A silky a light fresh cheese from Schull in Southern Ireland, which has a milky flavour.

Hunsley Goats Log
A fresh and robust tasting cheese rolled in Thyme, Tarragon and Marjoram. Which gives it a fresh aroma with dry yet creamy mouth texture. Made by Tom and Tricia at the Lowna Dairy in East Yorkshire

Celtic Promise
Cider washed rind, supple in texture with a spicy aromatic flavour.

Tea

We decided that we wanted to serve the very best in flavoursome and interesting teas. After tasting many teas and testing lots of suppliers we found we had the best on our doorstep.

We are proud to be offering tea from Taylors of Harrogate. For three generations their family business has been blending tea for their world famous Betty's Tearooms and we are able to serve you their excellent quality teas in the splendour of Swinton Park.

All our teas can be served as they are or with milk or lemon. Please let us know what you would prefer.

Leaf Teas

Swinton Park's Blend
A blend that has been made especially for us. Very similar to Yorkshire Tea and perfect for all-day drinking.

Assam Single Estate
From the finest Assam tea grown in the Brahmaputra Valley in North-East India. This tea is selected from the second flush when leaves are at their best. The flavour is distinctively malty.

Darjeeling Single Estate
Selected from an estate on the foothills of the Himalayas. Again picked on the second flush, giving it a subtle muscatel flavour.

Ceylon
Taylors purchase their Ceylon Orange Pekoe teas from Sri Lanka. The Dimbula teas taste light and citrus like, whereas Uva teas have wintergreen taste characteristics.

Earl Grey
The recipe for this popular blend was presented to the second Earl Grey in the 1880s and has become renowned for its elegant flavour of citrus and bergamot.

China Rose
This is a black tea from China incorporating rose petals adding a lovely floral character.

Lapsang Souchong
Depending on quality this distinctive smoky tea is Chinese or Taiwanese in origin. The flavour comes from the leaves being withered over pine-wood fires.

Blue Sapphire
Blue cornflower petals are added to this Ceylon tea to reflect the famous blue sapphire gemstones that are mined close to the Ratnapura region of Sri Lanka.

Bagged Teas

We also offer a selection of Green Teas and herbal infusions which are caffeine-free and contain no added sugar.

Green Tea; Green Tea with Jasmine
Blackberry and Elderflower; Organic Chamomile; Organic Peppermint; Raspberry and Vanilla

Rosé

Bin 322 - Domain Rimauresque Rosé 2004 / 05 Cru Classé, Cotes de Provence, France £27.95
This thirty-seven hectare Cotes de Provence domain, run by Pierre Duffort is owned by a Scottish family of tea-planters called Wemyss. The wines from Rimauresque have an impressive purity and distinction. The Rosé is made from local grapes Tibouren and Cinsault. "Very fine, dry and properly Mediterranean-scented…"

Bin 323 - Sancerre Rosé 2003 Comte Lafond, Loire, France £33.75
This estate, owned by de Ladouchette, regularly turns out delicate but flavoursome Rosés from Pinot Noir. Soft, complex and perfect for Summer-drinking!

White

Bin 257 - 'The 3 Amigos', 2004. Marsanne, Chardonnay, Viognier McHenry Hohnen, Western Australia £27.95
This exciting new wine venture is a partnership between Murray McHenry and the man behind Cape Mentelle / Cloudy Bay David Hohnen, and his daughter. Eighteen different varieties of grape are grown within four different vineyards. The grapes for "3 Amigos" are hand-picked and whole bunch pressed. The first run is fermented in aged barrels, resulting in a complex mouthful in our glass!! Winemakers note: - "Apricot Schnapps, Fennel and Coriander carried by peach and dried pear….and so it goes on…"

Bin 207 - Lugana Santa Cristina 2005 Zeneto, Veneto, Italy £27.95 Sergio Zeneto established this well-known house in 1960, and it has built up a reputation for itself as a quality wine producer. Their pride and joy is their own estate in the Lugana area - Santa Cristina. Here they grow the Trebbiano grapes which go into this Cru Lugana, as well as Cabernet Sauvignon and Chardonnay which get the full Bordeaux and Burgundy treatment respectively. A superior sub-variety of Trebbiano is used here to produce a wine of significantly more weight and character than usual. The 2005 is another cracker which offers fragrant, rich, stone-fruit flavours…

Bin 211 - Meursault 2002 Vincent Girardin, 'Vielles Vignes', Burgundy, France £49.50
Although the Girardin family can trace their viticultural roots back to the 17th Century, it was only in 1982 that Vincent Girardin commenced his career with just two hectares of vines. Now at the forefront of modern, exciting Burgundian winemaking, his wines are fruit-rich and clean with a healthy but rarely excessive dose of new oak. The 2002 vintage was outstanding for white Burgundy, and this old-vine Meursault has vivid aromas of melon, butter and hazelnuts and rich, creamy citrus fruit.

Red

Bin 309 - Brouilly 'Chateau du Prieure' 2004 Domaine Diminique Piron, Burgundy, France £28.50
Descended from a long line of grape growers stretching back to the mid 17th Century, Piron has put much effort into improving viticulture and the quality of his grapes. His twenty-two hectares of vineyards have an average vine age of forty years. His best wines exhibit attractive, floral fruit and a minerality that is rare in Beaujolais. This 2004 Brouilly is vibrant and packed with juicy fruit - perfect for summer drinking!!

Bin 360 - Mount Jefferson Pinot Noir 2003 Cristom Vineyards, Wilamette Valley, Oregan, USA £42.50
Oregan has a long and hard-earned reputation for producing Pinot Noir. Cristom, established only in 1992 is now producing a range of excellent Pinot Noirs and some very good whites to add to their reputation. Pinot Noir is produced in a number of Cuvées and from a number of estate owned single vineyards. We've chosen the Mount Jefferson Cuvée from an exciting range of wines, as it already offers up complex, rich, smoky, cherry fruit.

Bin 464 - Chateau Cantermerle 1997 5er Cru Classé, Haut Medoc, Bordeaux, France £52.50
The history of Chateau Cantermerle can be traced back to the middle ages, when the Chateau was part of a line of fortifications built to protect the Gironde Estuary from bandits. In 1855 it had the honour of being the final growth mentioned in the classification of Bordeaux Chateau. Cantermerle is a fifth growth, making wines of perhaps third growth standard. The eighty-seven hectares of vineyards are made up of 50% Cabernet Sauvignon, 40% Merlot, 5% Petit Verdot, and 5% Canernet Franc. The wine sees a year or so in oak with 40% new oak. 1997 is a softer, more forward vintage providing great drinking now. It has a more open nose with smoky, leafy fruit, and a supple ripe palate
